She was born December 25, 1941 and was welcomed into Deloid and Lillian Jean Mickelsen's family through adoption. She married Richard Lynn McCoy on September 22, 1967 in Salt Lake City, Utah. The marriage was later solemnized in the Salt Lake Temple.

The two most important things in Carol's life were her family and a deep abiding testimony of Jesus Christ. She was a faithful lifetime member of the Church of Jesus Christ of Latter-day Saints. She set an example for her children and grandchildren by always serving others. It's only fitting that Carol's favorite holiday was Christmas; not only because she was born on Christmas, but because she truly saw it as an opportunity to help those in need.

Carol was an avid quilter who loved making unique baby blankets and wedding quilts for family and friends. Some of her favorite things were word searches, Wheel of Fortune and spending time with her great-grandchildren Penny and Brent David that lived in her home with their mother.

Carol is survived by her children, Marty Murphy, Dixie (Jim) McCormick, John (Lori) McCoy, Philip Peery, Brian (Nakisha) Peery, Deborah (Erik) Brown, and Sharon McCoy. Her thirteen grandchildren and six; soon to be seven, great-grandchildren. Her two sister's in-law Sharon and Katherine. She was preceded in death by her husband Richard, parents Deloid Mickelsen and Lillian Jean Connelly, in-law's John 'Jack' Jardine and Julia Freze, sister-in-law Shirley Carlson, and her daughter-in-law Janese Peery.

Funeral Services will be held Friday, November 19th, 2021 at 11:00 am at The Church of Jesus Christ of Latter-day Saints at the Western Hills 1st Ward, 5380 West 5400 South, Kearns, UT. There will be a viewing an hour before the services from 9:30am – 10:45am.
